New Healthy Beginnings with Eat Nakd

New year, new habits. Cue the eye roll, as you look around at all your friends who are all of a sudden "eating clean" today but crashing tomorrow returning to the fast food and sweets of before. Too often when people make a new year's resolution, still hate that word read why here, they use an all or nothing approach of repentance, punishing themselves and denying themselves of what they want - basically setting oneself up for failure. Best part about failure though is that you can learn from it. I have been there before, all or nothing then crash and burn and you feel demotivated and borderline hopeless. I have your back though and want you to succeed in your healthy goals for a super #TBCSweetSixteen .
I always seem to get hungry in the afternoon, after lunch but before dinner and unfortunately this is when I gravitate towards sweets. I love the gratification of a wonderful baked good or chocolate but too often after I am still left feeling hungry and I just consumed something that is doing nothing for me.
This past summer I was introduced to Eat Nakd bars and quickly myself and my sister became hooked. These snack bars are made from yummy natural ingredients such as fruits and nuts which are 'smooshed' together for you into a handy bar. Containing 100% natural ingredients with no added sugars or syrups, these bars are also wheat, dairy and gluten free, and bursting with yummy goodness. Back to my love of sweets and chocolate though. These Nakd bars are great and I almost always have one in my purse in case I get hungry, that way I have an accessible healthy alternative in my bag instead of being tempted to grab something that I really wouldn't want (see my 2016 goal of living with intention is everywhere).

But even cooler about these bars are the healthy dessert alternatives you can make with them. Perfect for a night in with the girls, a great dessert to bring to a dinner party or just to have kicking around whne you get that afternoon craving like myself. Here is my favourite ice cream alternative-Nakd Cashew Cookie dough Ice Cream, I will be sharing more recipes throughout the month of January to keep you on top of your goal and enjoying yummy desserts along the way.
Nakd Cashew Cookie Dough Ice Cream
Serves: 8
Preparation Time: 15 Minutes Plus Overnight Chilling and 20 Minutes Churning
Ingredients:
3 Cups of Coconut Milk
2 Tbsp of Arrowroot Powder
1/2 Cup of Maple Syrup
1 Tbsp of Vanilla Extract
1 Tbsp of Alcohol (optional)
2 Nakd Cashew Cookie Bars, cut into 1cm chunks
2 Nakd Cocoa Delight Bars, cut into small chips
-Mix 1/4 cup of coconut milk with the 2 tbsps of arrowroot powder
-Pour the rest of the coconut milk (2 and 3/4 cups) with the 1/2 cup of maple syrup into a large saucepan and bring to a boil. As soon as the mixture comes to a boil , stir in the arrowroot mixture to thicken the liquid. Remove from the heat and stir in the vanilla and alcohol.
-Chill the mixture in the fridge until cold and churn. During the last few minutes of churning add in the chunks of Cashew Cookie Bars and Cocoa Delight chips.
-Transfer the mixture into a freezer-safe container and freeze for at least three hours or overnight
